One can surmise that her pancreas is failing because she is not able to produce enough insulin to maintain adequate blood sugar levels. It would be helpful to attempt medically supervised strict dietary changes (low glycemic, frequent meals, portion controlled) along with increased activity and weight loss to determine whether improvement can be made. However, simply stopping the insulin may not be a wise move at all. If she is unsure whether she needs it, getting a second opinion from another endocrinologist would be the very first step she should take. Stopping a medication without her doctors approval is a very bad way to proceed and could result in extreme medical complications. This is a very bad idea. She could go into a coma or even die if this went badly.
If the doctor has her on insulin, one must surmise she failed oral therapy. Again, a second opinion may be warranted here.
