What is a good Asian diet for people with kidney disease?

My father has kidney disease. The doctor has given us information about what are good and bad foods to eat for his condition, and I have also found some good resources online, which is great. However, many of the foods listed on the good & bad lists are geared more toward Western or an American diet. My mom, who cooks for my dad mainly only knows how to cook Chinese and Vietnamese dishes, and many of the Chinese foods (fruits, vegetables, grains, etc.) are not included on those dietary guides. I wonder if you could list a few "Asian" foods which are good & bad for someone with kidney disease, or point me to some good resources that may contain this information. By the way, he has diabetes too (which I read is a common trait for someone who also suffers from kidney disease)
